Falafel and hummus in pitta bread

Beano’s is a vegetarian café in Folkestone, and after having a gorgeous falafel in pitta bread there for lunch yesterday, decided to make my own today.

The falafel were ready-made but I did make my own hummus and usually, I can’t make it as nice as shop-bought, but today’s turned out well.

I bunged some chickpeas (no exact quantity but it was probably about a tin’s worth), a couple of tablespoons of tahini, a crushed clove of garlic, some lemon juice, olive oil, and salt and pepper into a food processor and whizzed it until smooth (well, smooth-ish, my food processor doesn’t really do smooth).

Some of it was spread onto a warmed pitta bread, then I added the falafel, along with some spinach leaves, yellow pepper, olives and cherry tomatoes.
