Gratin of rigatoni with roasted vegetables

The Meat Eater usually cooks on a Sunday. I say ‘cook’, he usually heats something up, unless he’s making a roast (unfortunately, although he makes a fantastic roast dinner, he refuses to make one in the warmer months) but this Bank Holiday weekend, I was treated to a proper homecooked dinner, courtesy of Delia Smith’s Vegetarian Collection.

As The Meat Eater went to the effort of cooking dinner, I should really make the effort of typing up the recipe. But it’s a bloody long recipe – not because it’s difficult but because Delia likes to describe in detail every step.
