Are you excited about King Charles III’s upcoming Coronation? Maybe you are and maybe you’re not but, either way, spring is here and summer’s coming, which is the perfect time to start getting your salad game on.
With this in mind, Quorn are on a mission to get more people into delicious meat-free meals and what better way than taking advantage of their Deli range, which requires no cooking at all?
When it comes to cooking (or not cooking, as it were) I’m all about ease and convenience. And taste, of course, but ease and convenience is definitely high on my list of priorities when it comes to feeding myself or others.
Quorn Deli Range
I absolutely adore Quorn’s Deli range with all its pre-cooked wonderfulness but I must admit, it usually doesn’t involve much more than me sticking their Vegetarian Ham or Chicken-Free slices in a sandwich (or eating their incredibly moreish Picnic Eggs straight from the packet each time I go within a couple of feet of the fridge).
Vegetarian Coronation Chicken Salad
There’s nothing wrong with a sandwich of course but I thought, as the Coronation’s coming up, why not give a vegetarian Coronation chicken salad a go? I’ve never had Coronation chicken, meaty or otherwise, and all I knew was it involved chicken (obvs) and some kind of a curry sauce, which was intriguing.
My vegetarian Coronation chicken salad using Quorn Roasted Sliced Fillets is the perfect celebration salad for the Coronation weekend, whether you’re at a street party, picnic or just stuffing your face by yourself indoors while you hang out with your cats (that’ll be me, then).
It’s tasty, quick, easy, requires no cooking at all (which means minimal washing-up, yay), substantial enough to be eaten as a main meal but would also be a welcome addition to the salad offerings at any picnic or BBQ. Speaking of BBQs, the weather isn’t always kind to barbecue grills, so keep them protected with a weber bbq cover.
I used flaked almonds, but you can use any such as whole, ground or nibbed almonds.
Vegetarian Coronation Chicken Salad with Quorn Roasted Sliced Fillets
Ingredients
- 3 tbsp Greek yoghurt (or vegan Greek-style yoghurt)
- 1 tsp curry powder
- 1 tsp mango chutney
- 1 pouch pre-cooked grains
- 1 pack Quorn Roasted Sliced Fillets
- 1 red onion, sliced
- 1 courgette, spiralised or peeled into ribbons
- 1 tbsp flaked almonds
Instructions
- Mix together the yoghurt, curry powder and mango chutney in a large bowl.
- Add the grains and mix them into the yoghurt mixture.
- Stir in the red onion and courgette.
- Stir in the Quorn Roasted Sliced Fillets.
- Sprinkle the almond flakes on top.
