Roasted aubergine, tomato & basil pasta

The basil I got from the greenhouse was a bit smeggy, so I threw it in the compost, the photo is rubbish, but this dish was lovely. Perfect for a summer’s evening in the garden.

  1. Great, that’s how I started too. I stopped eating fish when I got some plaice and chips from the chip shop (they’d run out of cod), scraped the batter off the plaice and saw it had black skin with bright orange spots!
