I bought some chilli nut butter at the farm shop the other day. It’s flipping delicious and I’ve almost used up the whole tub already; spooning four tablespoons of it into the granola bars I made today didn’t help. Looks like I’ll be going back for some more soon. Shame.

A local company makes the one I had, you can buy it here (the photo shows the plain peanut butter and the description says it contains Belgian chocolate – if you do order some, I hope they send you the right product. It also says it contains a hint of chilli; it’s more than a hint, it’s quite fiery).

The perfect snack for Vegan Monday (or any other day, really).

Chilli peanut butter granola bars (makes 9 bars)

4 tablespoons chilli peanut butter
4 tablespoons golden syrup
1 tablespoon wholemeal flour
150g nutty granola

Heat the chilli peanut butter and golden syrup and melt slowly.

Add the granola and flour to the peanut butter and syrup and mix together well.

Press into an 8” square tin and bake in the oven at 180C for about ten minutes, until just turning golden.

Lightly score and leave to cool before cutting into 9 squares.
