Vegan protein bars

Delicious, healthy vegan protein bars ideal for pre- or post- workout, or just as a snack

Ingredients
  

  • 2 cups pitted dates
  • 1 cup rolled oats
  • ½ cup cashews
  • 2 tbsp chia seeds
  • 2 tbsp hemp seeds
  • 2 tbsp pumpkin seeds
  • ¼ cup desiccated coconut
  • ¼ cup vegan protein powder
  • 1 tbsp coconut oil

Method
 

Prepare the base
  1. Blitz cashews, pumpkin seeds and oats in a food processor until broken down into small crumbs.
  2. Add the dates and blend again until the mixture is sticky and starting to clump.
Add remaining dry ingredients
  1. Add the protein powder, desiccated coconut, chia seeds, hemp seeds and a pinch of salt. Pulse to combine.
Bring it together
  1. Add the coconut oil. Blend until the mixture sticks together when pressed between your fingers.
Press into pan
  1. Line a 8" square dish with baking paper. Press the mixture firmly and evenly into the tin.
Chill and slice
  1. Place in the fridge for at least 1 hour to firm up. Slice into bars and store in the fridge for up to a week (or freeze for longer storage).
