Vegan Rainbow Sandwich with Airfried Vegetables

Ingredients
  • 1 aubergine, sliced thinly lengthways
  • 1 red pepper, deseeded and sliced
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
Instructions
  1. In a bowl, coat the aubergine and red pepper slices evenly with the olive oil, garlic powder and onion powder.
  2. Air fry at 180C for 20-25 minutes, giving the basket a shake halfway through.
Notes
You can leave out the garlic powder and onion powder or use other herbs and spices instead.
