Vegan Rainbow Sandwich with Airfried Vegetables

- 1 aubergine, sliced thinly lengthways
- 1 red pepper, deseeded and sliced
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp onion powder
- In a bowl, coat the aubergine and red pepper slices evenly with the olive oil, garlic powder and onion powder.
- Air fry at 180C for 20-25 minutes, giving the basket a shake halfway through.
You can leave out the garlic powder and onion powder or use other herbs and spices instead.
