Airfried Panko Crusted Potato and Onion Cakes (Vegan)

- 500g potatoes, cut into chunks
- 50g dairy-free spread
- 50g plain flour
- ¼ tsp baking powder
- 2 shallots or ½ an onion, chopped
- salt and pepper
- Panko breadcrumbs
- Boil the potatoes until they're done (about 15-20 minutes), drain and put back in the pan
- Melt the butter in a pan, then add to the potatoes and mash until smooth, then stir in the onions
- Sieve the flour and baking powder into the mashed potato, mix in thoroughly and season with salt and pepper
- Stir the mixture until it forms a kind of dough and comes away from the sides of the pan
- Cut the dough into 4 equal pieces and form into patties
- Coat in the panko breadcrumbs
- Airfry at 200C for 15-20 minutes or until golden brown and crispy
