  • 2 hard-boiled eggs
  • 1 packet meat-free sausage mix
  • Golden breadcrumbs
  • Oil for deep-frying
  1. Heat the oil
  2. Make up the meat-free sausage mix according to the instructions on the packet
  3. Mould the made-up sausage mix around the eggs and coat in breadcrumbs
  4. Test the oil is hot enough by dropping a bit of made up sausage mix into the oil. If it sizzles, it's hot enough
  5. Deep fry the vegetarian Scotch eggs for about 10 minutes
