As I was making this dish, I wasn’t sure how it was going to turn out as I thought it might be a bit bland.  At the first mouthful, I did think it was a bit bland and needed ’something’ but the more I ate of it, the more I liked it.  Very nice indeed.
It’s [...]

There’s quite a lot of ingredients in this, although most of which should be in your store cupboard.  In fact, I only had to buy a carrot, so it’s kind of like a free meal.  Result.
What is even more of a result is that it’s delicious.  The Meat Eater ate a mouthful, [...]

Pasta e fagioli

In: Cookbooks, Italian, Pasta, Recipes, Vegetarian recipes

A nice, chunky, warming dish made with potato, beans and pasta for these cold evenings from Good Housekeeping Step by Step Vegetarian Cookbook. It came out thicker than I expected, as in the colour index it says it’s somewhere between a stew and a hearty soup which I suppose it is, but you only need [...]

Spinach, olive and chili pizza

In: Italian, Main meals, Pizza

The Meat Eater made dinner tonight, as he’s in charge of cooking at the weekend (which actually means he only has to cook once as we usually go out Saturday nights) and he actually managed to make the dough in the bread machine all by himself instead of asking me if he was reading the [...]

As I’ve reinstated my organic vegetable box delivery, I needed some recipes to make use of the vegetables that I don’t usually buy, e.g. courgettes and other green healthy things like that.  I stumbled upon the BBC Good Food website and what a great site it is.  It has a search function that lets you [...]

Ok, my last plug for Leith’s Vegetarian Bible for the time being.  I’ve used this book a lot in the last week, and this recipe is one I’ve used lots in the past.  Good carbo-loading food (not that I run much anymore).
Ingredients (serves 4)
2 tablespoons olive oil
1 red onion, finely chopped
1 red pepper, deseeded and [...]

Another one from Leith’s Vegetarian Bible.  This was very nice, but slicing and frying so much aubergine was a bit tedious.  It’s also another book that calls for parmesan but to give Leith’s credit, after some investigation, in the beginning of the book they state  that they refer to the generic name for cheese and [...]

Another Delia recipe.  She’s one of those annoying chefs who either a) think parmesan is vegetarian; or b) can’t be bothered to state parmesan-style cheese in their recipes.  This is one of my pet hates.  Parmesan is NEVER vegetarian.  If you eat parmesan, you are not vegetarian, unless you consider a dead calf’s stomach lining [...]

Woo hoo, don’t get too excited, but here’s a meal I made up myself, and not copied out of a book.  OK, so it’s only spinach and ricotta pasta, which is hardly new and original but I had leftover spinach and leftover ricotta from the spinach and ricotta soufflés I made the [...]

Another cookbook I don’t use that often is Leith’s Vegetarian Bible, although I don’t know why, as it’s great.  It has 1000 recipes arranged by vegetable type, so if you’re wondering what to with those leftover mushrooms, just turn to the mushroom section and this book will give you a load of options.  There are [...]
